Tonno del Chianti is prepared with pork loin, coarse salt, white wine, bay leaves, rosemary and juniper berries. Tonno del Chianti takes its name from its clear, golden appearance which reminds of the more famous tuna in oil. Every bite takes us back to the strong flavours of peasant tradition and to the genius of the housewives who invented this dish in order to preserve meat for a long time, especially during summer when fridges did not exist.
